The best hot honey is born from fermentation. This is a long time Salt Gang darling, we’ve been making it together for almost ten years.

BUILT DIFFERENT, ALWAYS

Lacto fermented for punchy probiotic depth. That ferment brings tang, lightness and a wildly more-ish balance you won’t find in chilli-infused honeys. Small batch, never heat-treated, always alive.

POUR ON

melty toasties and over soft cheese, bring sweet heat to smokey steak and eggplant parm, drizzle crispy fried chicken, gloss noodles and pizzas, toss through golden roast veg, drench freezer dumplings that need a spark, add to all your salad dressings — even anoint ice-cream and cocktails when you want sweet heat to surprise, or make a lemon and honey tea when you’re feeling rough

We start with raw Adelaide honey, fresh chillies and garlic, then leave them to gently transform over a full month. In that time the honey stays alive and the good bacteria start to hum, the chillies mellow, developing natural probiotics and a tangy brightness. What you taste is alive and complex, a sweet heat mellow heat that lights up your tongue.

Nearly ten years of fermenting this honey together makes this a lot more than just something we sell. We’re so proud and fond of it, it feels like us bottled up. Slightly spicy, sweet, always ready to throw a dinner party.
