We take the garlic and chillies covered in lacto-fermented honey left over from making our Hot Fermented Honey, blend them up smooth, and add salt and apple cider vinegar.

The result is a perfectly balanced sambal with a serious bright kick.

Perfect with eggs, curries, or a little slick on a sandwich or toastie. Spoon over rice bowls, mix into marinades, or combine a few tablespoons with buttermilk to make an unreal fried chicken brine.
