BBQ Umami Sauce — sticky, savoury, grill happy


All-purpose brown sauce, Chinese BBQ style. Fermented bean paste meets a splash of Secret Weapon Soy, lively pickled Er Jing Tiao chillies and roasted sesame. Big umami. A little sweet. A little spicy. Very pourable.

A backyard bbq with hundreds of skewers and friends yelling for plates. Dark caramel savoury, hoisin-ish depth, sesame warmth, a tidy chilli tickle, clean glossy finish that makes everything taste rich.

USE ME

Straight as a glaze, loosen with a splash of water for a quick stirfry base, or whisk with Dumpling Lover Vinegar for an instant dipping sauce. Brush over charred chicken wings and marinate pork ribs, glaze eggplant and then grill, swipe on bao and bacon and egg rolls, finish noodles and rice bowls, drizzle a runny fried egg and call it dinner.

A real flavourbomb, we pour in fermented soy bean paste for deep hoisin style umami while a dash of our Secret Weapon Soy adds spiced savoury layers. Pickled Chinese erjintiao chilli brings a little sparkle and roasted sesame rounds it all with a nutty glow. It brushes on like lacquer, clings to hot things off the pan, and turns simple plates into satisfying feasts.

This one gets a lot of work in our house! The easiest stir fry sauce, it’s also a one stop sauce for marinating and grilling. Mix with Hot Fermented Honey and Dumpling Lover Vinegar and a little peanut butter for the best cold roll dunk, brush on split eggplant and grill for an instantly delicious Chinese riff on Nasu Dengaku.
