It’s herby, savoury and sunny. Toasted fennel seed brings a soft aniseed edge to the medium-hot chilli, with a bright streak of lemon cutting through the rich, grassy oil.

Use it anywhere you want umami chilli oil with a Mediterranean lean: splash in tomato pasta, white bean salads and soups, roast veg, focaccia, tuna carpaccio, grilled greens and meats, herby new potatoes.
